It is in the Mancusi district, between 600 and 700 meters above sea level in the territory of S.M. of Licodia, which grow our secular olive trees of Nocellara dell ‘Etna, on terraces with dry lava stone walls. Here we produce our organic extra virgin olive oil d.o.p., with an exceptional fragrance and spicy aftertaste. The premature harvest, scrupulously done by hand, and a timely pressing, carried out cold, guarantee the high polyphenolic levels that distinguish our E.V.O. d.o.p, coveted by the most demanding palates and the most exclusive kitchens.
A part of our vineyard is still on the loose, we boast of plots as well as fifty years, even twenty-five years.Heroic cultivation takes place in the Cavaliere district – on the south-east side of Etna, on plants that are partly sapling and partly espalier.
Through non-mechanized cultivation and the passion that distinguishes us from cultivation to production, we express the authenticity and uniqueness of the Etna terroir. The Travaglianti family farm has the objective of enhancing, respecting and preserving the Etna area, guaranteeing its integrity and benefits for present and future generations.
