Our Etna rosato IGT comes from a soft direct pressing of the de-stemmed grapes of Nerello Mascalese. Maceration on the skins is very short.
The must, after being cold decanted for one night, is stripped and left to ferment for about two weeks in steel at a low temperature. After the first racking, a short period of batonnage is carried out, before filtration. Bottling and aging in the bottle for at least 3 months.
